I picked up a batch of fresh peppers from the market and they
were too hot for me. That’s nearly unheard-of, but it happens. I’ve been
playing with running cottage cheese through the blender to make a smooth base,
so I thought I’d make a pepper cheese. Something creamy, cooling and hot at the
same time. A lovely green cream still turned out to be quite hot. So I spooned
the green cheese into a bowl of still cottaged cheese and finally, I got a
cracker spread. It was still a heat to be reckoned with. Never give up.
