When my ducks where in a row

 



Someone at random remarked that it is good to have one’s ducks all in a row. By the end of the day someone had given me duck eggs. She said they looked like stones. They were pretty as a picture, very large and rich. I did some research to learn the white is extra clear and people love them to bake. Mine were all used – and enjoyed – as breakfast eggs.

 

It’s a grape “must” have – Italian Cheese Dressing is marked as sweet, with white vinegar and Parmigiano Reggiano. It sure was sweet, and I looked to see the main ingredient is concentrated grape must. I just don’t think we’re used to that around here. But we should be. Cardini salad dressing, “Modena Italia 1641” is a light Italian cheese dressing suited to arranged salads as well as sauces. Let’s talk pasta salad. And tacos, potatoes, etc. All. Summer. Long.

 

 

Festive  -“ Love the flavor, love the crunch,” says Darragh and lots of other fans at www.feelfestive.com. They’re chickpeas, or “garbanzo halves” in little packets for people with nut or gluten allergies and people wanting a more healthy snack option that’s just short of addictive. Kids will crave them for lunch boxes and they make truly fun salad and rice and noodle bowl toppers. Flavors include sea salt, ranch, honey bbq, and the like. Love ‘em all.

 

Cask & Kettle Hard Coffee & Cider Cocktails could have fooled me. Lots of coffees are “infused” with the flavor of liquor. Sips to slay and refresh

 



A toast to things served in glasses. Aqua martini glasses I scored at a garage sale often hold my yogurt parfait desserts. It’s so elegant to serve a glass of health with a little spoon. Toppings can anything. A recent round called for slivers of orange peel and a crushed granola bar. Anything goes… in a glass. Here are some other ideas for your cups and mugs:

 

Chariteas – Because Port Arthur was originally named Aurora, we can imagine the colors and spectacle of the Northern Lights. Imagine them in a pot of tea. If you have a clear brewing system, you can get a show with color-changing tea that goes from deep midnight blue tones to dusky purple. Mango, coconut, rosehips, butterfly pea flower help give you this aromatic “magic.” We wowed a tea lover who I hope will come back for Summer in Provence, featuring lavender and lemon balm. Give Mom what she wants on "her" weekend

 



What if Mom doesn’t want indulgence on Mother’s Day? Maybe she wants the family to clean out the garage. Can you handle that? Ask what she really wants, then listen! But hey, I’m down with these “traditional” selections that have brought me joy:

What’s a Whimsey Piece? – It’s a “puzzle” why we don’t relax more. I had the best time challenging my brain to assemble “On the Shelf,” Crissie Snelling’s image of a cat lounging on a bookshelf, along with cat figurines. And the whimsey pieces (Victorian throwback phrase) are cut into cat shapes. It’s cat on cat on cat with this Nautilus Wooden Puzzle. I know plenty of puzzle fans who would appreciate this well-made, boxed gift set. It’s a pleasure to open, unbag and snap those tricky pieces into place. The “Basic” unicorn wears a plaid button down. I like Shabby the Narwhal but you’ve got to watch out for Glitter Tornado, Rainbow Aura and Double Dutch. d they’ve healed me.  I’m keeping a jar of eucalyptus shower steamers by my meditation chair. These pure white, sparkly chunks are to be thrown in your shower so you inhale that good steam. A mom created this wide-vented-curved brush with boar and pin bristles to calm her child’s sensitivity, and adults are way into it, too. Not every product works the way it claims to, but the sisibrush.com does, for me. Just the brush alone goes through my thick curls, but the “secret” is a refillable spray bottle tucked inside the handle. Detangle kids’ hair or style your own in a breeze. Thanks, mom. 

 

Give Mom a day back. Donna McGeorge’s book asks readers to consider how they’d like to be remembered on their 80th birthday and how we can be less busy. “The One Day Refund” challenges to take back time and spend it wisely. Eggs with ease



There’s variations of an egg dish with just a few ingredients: Eggs, jalapeno peppers and cheese. Sometimes there’s flour. It’s easy to make, serve and eat. I’ve used a new blue Texturra Performance non-stick bake pan for every version and it it’s been a pleasure to not clean the pan. A simple rinse and wipe prepped it for the next experiment each time. A “unique texture” encourages airflow and structural rigidity with even heating and “excellent release.” Sounds like therapy, right? Please DO follow instructions to prevent scratching, staining, etc. Mine is still new and I’m still loving it. www.wilton.com can set you up. The egg dish got a boost on my second styling with Better Body Foods Whole Grain Organic Oat Flour Blend. I didn’t even measure. I just scooped out a couple of spoon’s worth and blended into my pepper eggs with great results. War Pig BBQ – It was the name, SNAFU, that got me. Apparently my dad played a character, The Great SNAFU, during his military days. He was a ham, but War Pig, a veteran-owned and Houston based group of barbecue lovers, knows what do with hams. Situation Normal All Fowled Up is their chicken-fowl sauce. FUBAR, For Use on Butts and Ribs, is another fun title and great flavor. These are good, these are fun and they’re from people who don’t mess around with their barbecue. Liberty Beans – I hope it’s okay I’ve got my Liberty Beans Freedom Blend in a travel cup. While the patriots at www.libertybeanscoffee.com believe in in God, family and friends AND that coffee should be consumed black and from a mug. But, no judgements, they add. I’m good with all of that plus the amazing aromas and deep flavors. Jim the chef and Diane the chemist are married to each other and a fun/serious coffee production out of Cherry Hill, N.J. Mugs clinking to  their continued success!

Plant Junkie – Remember Elaine’s  “big salad” from “Seinfield?” I had a friend who ate the same home version of a big salad daily. Classic romaine, tomatoes, red onions and a ton of olive oil. Great for the body, but I have the “culinary thrill seeking gene,” so I like to try different textures and mix ins. Canned corn and black beans are some faves right now. And how to dress these works of art in a bowl? Plant Junkie is making it fun. This line offers plant-based creations with natural stuff and Caeser is a newbie. Avocado oil makes it snap. But hey, Thai Peanut is also calling my name. Chipotle Ranch makes you kick up your carrot sticks. I really enjoy this line and what it stands for. Without a Trace – You’ve got a pinky promise from a family that kids, being super heroes and rock stars in the making, won’t have to be left out of snacking on account of food allergies. They are now speaking from and baking for experience. I’m truly impressed with plant-based sea salt crisps that are “All of the Awesome. If you like Cinco de Mayo...

 


Maybe you are compelled to sing “If you like Cinco de Mayo” to the tune of “If you like Pina Coladas” each time the season rolls around, I salute you. This Taco Tuesday fan is ready for the hot stuff mentioned below from Mexican and other cultures.

 

Holy Mole –  Mole is a personal favorite and I think of all the traditional gathering and grinding of so many components each time I open a modern jar of the paste. I’ve used the same jar brands for years, as they are easy to access from the market. Now I’ve been exposed to something new that tastes very “ancient,” in the best sense. Hernan Mole Poblano is based in Del Rio and it comes from a line of pride. The founder’s back story includes fashion, trade and flavor at www.hernanmexico.com. The succinct part of what I’d like to convey is the ease of preparing what comes from these jars into your pan and forming it into a divine sauce for chicken or whatever else is on your stove. One version combines four kinds of chiles with raisins, nuts and sesame seeds, cacao, plantains and raw cane sugar. Another has a pumpkin seed focus that is green from epazote and spinach with other earthy flavors. They’ve made a favorite even better.

 

TWANG – You can take things slow, or you can Twang them. A whole new world of beer salt opened up to me and I am… intrigued. It’s a big dill, as in dill pickle seasoning is trending. That’s just one option. In addition to Michelada cocktail mixes in several ranges, you can rim your glasses and beer bottle necks with intense salts in lime and unexpected flavors. Twang-A-Rita is a thing. Paloma Love, Clamato, Safari Spice and other blends would be talked about at your next gathering. Mango Chile Twangers are intriguing topping fruit salads are adorning fruit on the side of mocktails. Rimming salts make it all look and taste “extra.”  I enjoyed lime salt on popcorn. Black Garlic – Just get hot for Cinco de Mayo, but you can accent from other cultures. West African peppers go into Hot N Saucy Black Garlic N Peri Peri  sauce. I love that this pours out in such a deep, dark color you could artistically paint a corner of your plate with it for culinary décor. Smoke + Honey – More heat from other cultures: Rainier Foods is a family business in the shadow of Mt. Rainier and they’ve surprised me. I’d never have guessed they like the heat as much as we do here in the south. When I heard of combos such as Smokey Honey, Blackberry Smoky Honey, Gochu with roasted garlic and chilis and The Essentials, with sea salt, garlic and pepper…. I thought these would match my husband’s passion for Sunday afternoon ribs. While I learned cook new stuff on Korean Gochugaru chilies, my instinct was right on: the blackberry heat is my fave of faves. Here’s to the heat!  www.rainierfoods.com

Honeys, sprinkles and rule breakers


Bees work so hard. But don’t feel guilty enjoying their labor. Plant natives to keep the bees busy and consider these options in honey news:



Runamok is maple famous and now this Vermont company is sweet on honey. My favorite adventures are with peppers and listen to these options: Chipotle Morita Infused, Chile de Arbol Infused and Szechuan Peppercorn Infused. These title-specific names hint at what you are getting in for so now it’s time to get creative. Sprinkles - Do you have a sprinkle collection? Is it… dated? As color trends, shapes and expiration dates change, consider what’s on your nibbles. I saw a trendy cupcake dispensary, as in a vending machine, that stocked beauties. You can make your own with help from Wilson and the Pastel Egg Sprinkles Mix. Just looking at these treasures makes you think of little kids posing with baskets. www.wilton.com suggests these are also attractive for baby shower treats.

 

Sweet Diane’s Granola is so good it doesn’t really need all the inspirational quotes on the package, but I like them anyway. “Healthy Eating Happy Life” and “Food is Joy” is not so subliminal messaging on resealable packages in flavors such as orange cranberry reminding you that eating healthy is not a chore. Culinary quotes are nourishment


When good food is linked to nourishment for the soul, a prayer and a blessing, we are getting back to basics. There was a time when a whole family set out to gather the grains for their daily bread and cast a net to get fish on their table. A book of thoughts on this matter includes some written before dinner was driving to a window to pay for a plastic box of… what have you.

Dill Pickle Lentils? Just think of the pitch meeting Farver Farms of Montana had to create excitement for little ol’ lentils. Juicy birria tacos were worth the wait



Birria - It's taken me more than year to try birria tacos. Worth it. A friend referred me to La Envidia on Gulfway Drive. Here this was served with a side cup of red sauce for taco dipping.  It was slap-your-mama good. The traditional definition is tacos served with a sauce of dried chilis, annato paste, onion, tomatoes and spices. Southeast Texans love their "gravy" so there's no need for an extra push. If you haven't tried them, please do. 

Scraps, Please – When you’re begging for scraps that seem like the best example of recycling, you may be enjoying Andie’s Eats Cake Scraps, tempting layers of cake and frosting in a cute little jar. Each new creative flavor I tried was my new fave. Wait ‘til you see her full on cakes and Karma Cookies. May we suggest the Drunken Shamrock in March? Bonnie & Pop – As we walk in faith toward a religious season, go nuts with an indulgence that is “Star-K Kosher, Halal and divine.” A woman and daughter named their fresh-focused chocolate/snack gifting company in their relatives’ honor. There was both a Bonnie and a Pop in my family as well. If the name caught my eye, so did the presentation and taste. A flat sort of wooden crate offered a peek at nuts to come, including Chili Con Lemon Pistachios. “Open the latch and be dazzled,” teases the branding materials. Got me. Makers suggest sending birthday wishes or even a “quarantine hello” to your friends and family. Dazzle ‘em from www.bonnieandpop.com

Calypso Light is 5 calories and refreshing, so… win. Super-colorful drinks like Ocean Blue, Strawberry Lemonade and Southern Peach don’t always come with a low-cal tag. Peddler’s Paradise for treasure thrill seeking

Michael has only one rule at Peddler’s Paradise. I suggest you visit him at 3190 Merriman Street in Port Neches to find out what it is. Need tables, chairs or dishes? This consignment shop could furnish your culinary corner. Dolls, tins and treasures keep shoppers intrigued and coming back for more. Michael – that’s all it says on the biz card – is pretty  intriguing himself.





Two Fakers:

Risotto? Really? – I knew that RightRice risotto was different, but I forgot why when I made the best risotto I’d ever made. It was easy, too. Creamy Parmesan Style risotto is made from vegetables. Lentils in fact. You may have thought you didn’t like your veggies. Bet you like these.  I threw in frozen spinach and topped it with feta. Now that was good, and “way fewer carbs,” as the bag promotes. Betterer Foods of San Francisco delivers this. www.RightRice.com

 

Not Milk – You can quit making fun of plant-based milk alternatives. I’m in love with Not Milk in whole and 2 percent because it slurps, froths and tastes like milk. The company gives those attributes at www.notco.com and I’ll vouch for a delicious pour. Message on the carton: “Hello Curious Foodie. Welcome to the Future.” They’re talking to us!

 

Pass the Cornbread – Kentucky is famous for producing racehorses, bourbon and hemp. Didn’t know about the last one? Cornbread Hemp of Louisville, Ky. has a video that could make you a proud American to get various types of relief from their fresh fruit, full spectrum, flower only and 100 percent organic product. You see those dropper bottles everywhere now… this one is powerful in a good way, with a recommended dose of daily, before bedtime. Organic berry gummies are just way above other options. Lent and shamrocks


It’s that crazy time-change/self-examine/green beer time of year. Let’s get to it, beginning with new ideas for the age-old egg:

 


“The Fresh Eggs Daily Cookbook” - Colorful sprinkles, lime bourbon sour and cardamom streusel blueberry muffins are some prizes you may not expect in a book focusing on eggs. This just-right-for-Lent book also could inspire you to keep going meatless with images of fried egg on buttered avocado toast or to give a sunny look to your Easter deviled eggs with turmeric. If you want to stay creative with your own chicken’s eggs or if you need new ideas for your store-bought, Lisa Steele of www.fresheggsdaily.com has your cookbook for the unexpected.  Easiest thing ever: Fried eggs with apricot jam on top, crumbled goat cheese sprinkled about and fresh thyme and Kosher salt for garnish.

Maybe it’s the vented lid? Zavor Noir line is cast aluminum cookware and I think the 100 percent Whitford Fusion TI Ceramic Nonstick Coating is the stuff. Meals I’ve made in the first weekend of use: cooked an egg in there, stir-fried, made a pasta sauce and cooked up a huge batch of chicken thighs in the spacious sauté pan. Remove handles and grips to put these babies in the oven. They like lower heat because they’re sensitive in the good way. Daisy Cakes –  Kim “Daisy” Nelson has unleashed her baking superpowers. Coffee and Tea Pleasures

Ever open a coffee bag so your reading break smells like a coffee shop? Does a spot of tea lift your spirits? Top-notch equipment and product enhances your daily rituals. We hosted a tea-party to try new things with a friend who was wowed.



VelociTea Tea Maker is the kettle that has taught me what tea should be like. I knew but never thought it could truly make a difference how long you steep your green, black or herbal teas. This one does it for you and somehow gets the hot water up into your infusion basket. This automatic tea maker has amazing, fragrant teas to play with. There’s so much fruit in loose teas like Wild Strawberry and Raspberry Patch. Don’t ask questions. Just watch the show going on in your clear kettle and enjoy the proper tea. We did. These are some new-to-me treats that serve as a dessert in some cases: Golden Turmeric Chai is very trendy. There’s Decaf Chocolate Hazelnut, Moroccan Mint and Chocolate Mint. Coconut Mango is for car travel. Soon enough, I’ll switch from hot to iced. Cajun, Louisiana books lead us into Lenten season


If you’re not craving chevrette,  gumbo and a nice cold biere after reading “Splendor in the Salt Grass: A Celebration of Untold Stories in Cajun History,” then I don’t know what, cher. Jim LaBove wrote and illustrated this book as part of what I call his Cotton’s Seafood series. With passion and detail, he tells about his experiences growing up Cajun and collecting seafood from Sabine Pass waters. The family’s background comes out in stories such as “Henri and the Louisiana Black Bear.” Questions on hoodoo? All the little boats that navigate our waters? The great barbecued crab debate? Now that will bring you some joie de vivre.

 


“Exploring Cajun Country: A Tour of Historic Acadiana” - Are you venturing out of the Great State of Texas into the Sportsman’s Paradise of Louisiana? Consider reading up on the food, music and folktales in a book written by an author I have given a grand tour of Port Arthur. Cheré  Dastugue Coen can tell you about a gris gris, wrap you up in a romance and haunt your dreams. She’s a traveling writer and in “ Cajun Country: A Tour of Historic Acadiana,” she fills us in on places we may have just passed through. Did you know Gonzales is the known as the Jambalaya Capital of the World? Our near-neighbor of Sulphur was once named the “richest 50 acres in the world.” In 1867 the mineral was discovered there and five men died trying to bring it to the surface.

I love the image of a flowering magnolia with floral “fallout” caught in a lower petal as a bee overs in a cup of cream-colored petal. An electric blue peacock of Jefferson Gardens’ Rip Van Winkle Gardens is on the next page, along moss-covered oaks of Avery Island. Coen’s book can be found on Amazon.

                   If I was the Queen of Spain in 1770, I’d be gifting church steeples left and right. St. Gabriel, La. got one. On the next page read about Carville’s leprosariam and Sorrento’s Acadian-Style Shotguns housing. A movie set is another page over in Houmas.

 Mary Kay Charisma – They said Mary Kay was “thinking like a woman.” She went with it. Her pink empire inspired thousands of women to be proud of their contributions to their home and business world. A new book has a “wow” story on every page about her extraordinary personality from business sense to sharing caring moments with her workers and their families, taking chauffeurs to dinner and a passion for burgers.

 “Fixing Food: An FDA Insider Unravels the Myths and the Solutions”  - Food labels, lemonade stands, saturated fats… Richard A. Williams, Ph.D., has produced a book that reads like an angry crime novel. The in-fighting that goes on behind closed government doors is enough to raise your blood pressure higher than a can of high-sodium soup. It should be simple. Tell consumers what’s in the can of food you are feeding your family. Then, make sure they understand what it all means.

               “Say it Now! Say it Right!” - Situations from spinach in your teeth, how do you like my cooking/management/child rearing and the dreaded “does my butt look big” are covered with skill in Mary J. Nestor’s book, “Say it Now! Say it Right!” Digestible short chapters will guide readers through job interviews, spats with friends and relationship bumps. “How to Handle Tough or Tender Conversations” is the subtitle.  Tip: Sometimes saying it right begins with saying you have been wrong before. Lots of tips here and in the back you can make notes on how you have handled things in the past, how you can do better and the consequences of speaking up or not.

“The Art and Science of Drawing” - Author/artist Brent Eviston’s book offers guidance to “Learn to Observe, Analyze and Draw Any Subject.” Ever glance at your tea cup and get an urge to sketch it? That gourd on kitchen counter? Let’s draw it. Ready to make 100 circles? How about a bird? You can do it, he says. The Ever-Changing Line is my kind of project. Draw a line that continually changes in quality and character. Begin anywhere and turn the line into dots, squiggles, explosions and smudges. Change the pressure of your pencil and fill the page. Now you’ve got some inspiration for representational drawing. Keep your mind open, he advises.

Empty Calories of Words – Got writer’s block? Take a break. Listen to music. Exercise. Hey that’s good advice for anyone. Then there’s stay hungry and get feedback. Why do all the food and diet exercises catch my eye in Steve Gamel’s book?  “Write Like You Mean It: Mastering Your Passion for the Written Word” is succinct, as he advises writers to be. What’s your niche and who is your audience? Remember to listen when people talk. Don’t make readers work to hard, get to the point and use fewer words. Get rid of those “empty calorie” words. For instance:

·            From “At all times,” to “Always”

·            From “In light of the fact that,” to “Because”

·            From “Have the ability to,” to “Can”

·            From “In order to” to “To”

·            From “On two separate occasions” to “Twice”

Sharing you Magic Dust?  - What’s your magic dust and how do you begin sprinkling it on others? Charisma, resilience and character are bound to be some of the things in the best dust. The opening Mark Cuban story of positive on positive is a good example. Author Mark J. Harris shares profiles of positive people he’s encountered in “Magic Dust: What Is It? Who Has It? How Do You Get It?” I say, let’s all get dusty in 2022.
 

“Committed: Finding Love and Loyalty Through the Seven Archetypes” - Cook for yourself and make dishes that you – not others – love to eat. If you’re not a good cook or you don’t like to cook, eat out by yourself. Ask for a table for one, put away your phone and dine with yourself. Savor and don’t rush. This is advice for a 30-day mind and spirit detox. This book covers getting over hurt and righting one’s self when dealing with workaholics, introverts, narcissists, etc. Hey, we’re all something. But we should all love ourselves, authors Carmen Harra and Alexandra Harra write.
